Heat the vegetable oil in a small skillet. Fry the potato until golden brown.
Transfer to a dish covered with a kitchen towel and set aside.
Fry the sausages in the same skillet. Add the reserved potatoes and the parsley.
Season the eggs with salt and pepper and pour on top of the potatoes and sausages, cooking at medium heat until set. Turn the omelette to cook the other side for one minute.
Put the omelette on top of the Flatout bread, roll like a jelly roll.
Cut in half and serve.
