Tallarines rojos (Spaghetti with tomato and carrot sauce)

Ingredients
  • 2 pounds tomato (peeled, seeded, and chopped or pureed)
  • 4 garlic cloves
  • 1 red onion
  • 2 large carrots, finely grated
  • 4 tablespoons olive oil
  • 1 tablespoon tomato paste
  • ½ cup dried mushrooms, rehydrated in a glass of water, and chopped (strain and reserve the water)
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • Grated Parmesan cheese (optional)
  • Salt and pepper
Instructions
  1. In a saucepan over medium heat, saute the garlic and onion over medium heat, for 5 minutes, stirring.
  2. Add the carrots, mushrooms and tomato paste, and stir for another minute or two.
  3. Add the tomato, tomato paste, bay leaves, and the mushrooms' soaking water.
  4. Cover partially, and simmer for 30 minutes.
  5. In the meantime, cook the pasta according to package instructions.
  6. When the sauce is ready, season with salt and pepper, sprinkle with oregano, remove the bay leaves and stir.
  7. Serve the pasta on plates, covered with sauce, and sprinkled with grated Parmesan cheese (optional).
