- ¼ cup cooked corn
- ¼ cup cooked carrot, diced
- 1 tomato, seeded and diced
- 1 cup cooked broccoli florets
- 1 cup cooked potato, cubed
- 4 lettuce leaves, shredded
- 2-inch square extra firm tofu, cut in thin slices
- Juice of 1 lime
- 2 tablespoons olive oil
- Salt and pepper
