Raw chocotejas

- ½ cup dates
- 2 tablespoons dried coconut
- ¼ cup 100% cacao chocolate pieces
- ¼ cup pecan halves
- In a mortar or a food processor, turn the dates into a smooth paste. Add the coconut and mix well.
- Put a layer of date paste over half the pecans, and cover with the other halves, making a sandwich.
- Melt the chocolate in a bowl over hot water.
- Dip every teja in the chocolate, and cover completely.
- Place on a tray covered in Silpat or parchment, and put in the fridge until the chocolate hardens.
